Preparation determines freezing consistency

A fluidized bed IQF freezer is designed to freeze free-flowing individual pieces, but the upstream preparation still has a major effect on the final result. Vegetable variety, cut size, surface moisture and feed distribution should be reviewed before the freezer is selected and configured.

Start with washing and cutting

Vegetables should be washed according to the product and factory hygiene procedure, then cut into a reasonably consistent size. Uneven pieces may require different freezing times, while excessive fines can affect airflow and create additional cleaning work. The preparation line should deliver a stable product flow to the freezer inlet.

Use blanching when the product requires it

Some vegetables benefit from blanching before freezing because it can help control enzyme activity and prepare the product for the required quality target. The blanching temperature and residence time should be determined by the product process rather than copied from a general setting. After blanching, the product must be cooled efficiently before IQF freezing.

Control cooling and surface moisture

Ambient-water or ice-water pre-cooling may be used depending on the product and process design. Excess surface water should be reduced before the product enters the fluidized bed freezer. A suitable dewatering stage helps keep pieces separated and supports more stable airflow through the freezing zone.

Feed the freezer evenly

Product should be spread across the belt without excessive overlapping or sudden surges. The feeding conveyor, vibration system and product distribution arrangement should be matched to the required hourly capacity. Stable loading helps the freezer deliver more consistent residence time and reduces sticking or clumping.
